Black Bean Soup

Tuesday night we had black bean soup.  I feel like we have eaten so much red meat lately that we needed to take a little "meat break."  We have literally eaten more red meat in the last month than we did the entire last year - yikes!  This brings us back to Tuesday night - black bean soup.  I have made called for a lot of spices, many of them spices that I wouldn't think would be good in black beans, so it was surprising that the soup was pretty bland.  We still liked it, but usually would like more of a kick. If you use the same recipe, you may want to add peppers, or more onions, or double the spices (unless you like rather bland soup).  With the leftovers, we added shredded chicken,  more onions and peppers, and put it over rice, and we liked that even better.
